Agave Azul, the new Mexican restaurant in Kearney serves up unique dishes like Mayan pork and fresh seafood

Edgar Parra said he was 4 or 5 years old and was helping his uncles in Mexico water apple trees. They asked him what he wanted to be when he grew up.\n\n“I said I wanted to have a restaurant, but I said, ‘I’m not going to cook for the public, it’s just for me,’” Parra recalled this week.\n\nMost of his dream has come true. He has a restaurant and he’s cooking, but he’s not cooking only for himself. Most of what Parra is cooking is winding up on diners’ tables.
